After all, second only to the invention of skiing in defining the ski town has been the invention of après skiing! And the tradition has not been forgotten about in Aspen. Acquolina Trattoria and Pizzeria
Acquolina is a trattoria, which simply means an Italian restaurant, and a pizzeria. It delivers an informal atmosphere which is nevertheless elegant. Their goal is to immerse their clientele in the "Italian experience" from the moment they enter to the moment they leave with a vow to come back again. Aquolina also plays host to private parties.
Open for dinner, year round, their extensive menu features a wide variety of antipasti and focacce, such as burrata and grilled calamari, and salads such as "Cesare" and "Mediterranea." Visitors will find pastas of all kinds here, including housemade tarozzi, lasagna, fettuccine, and ravioli. Their thin crust personal pizzas embrace the Italian tradition, with such offerings as the Capra with pesto, grilled artichokes, goat cheese and pine nuts, the Pollo with roasted chicken, the Parmigiana with eggplant, and the Funghi with wild mushrooms. This is a must stop dining experience!

Ajax Tavern
The Ajax Tavern is one of two restaurants in Aspen's Little Nell Resort, which was built in 1989 and is Aspen's only Five-Star, Five-Diamond Hotel. The resort gets its name from an old mining claim located nearby. The Ajax Tavern is popular because of its patio seating, enabling guests to sit out in the sun and people-watch as they eat. The resort, and the tavern, are located near the Silver Queen Gondola.
The Ajax Tavern has earned a host of awards: it is ranked #2 of best Aspen restauraunts by Food & Wine magazine, and is #1 on Esquire Magazine's list of "15 More Restaurants not to Miss." The Culture Trip ranked the Ajax Tavern as "best apres-ski bar in the United States." It's an excellent place for families to gather as there is a special kid's menu to keep the children happy.

Ashcroft Pine Creek Cookhouse
In 1879 the mining town of Ashcroft was founded. It boomed for eight years until in 1887, the Denver & Rio Grande Railroad bypassed the town in favor of Aspen. Ashcroft became a ghost town practically overnight. Today, many of the buildings are still standing and a popular activity is to hike from Ashcroft to the Pine Creek Cookhouse, which is ideally situated at the base of the Elk Mountain Range, in Castle Creek Valley.
The Pine Creek Cookhouse dishes up American Alphine cuisine, with ingredients they source locally and which are raised organically. Their menus are therefore seasonal, divided into summer and winter. Chef Chris Keating, graduate of the Culinary Institute of America in Hyde Park, New York is the culinary magician doing the cooking in the Pine Creek Cookhouse.
